| The Brasserie - John Bryne (2007-08-02) | | We were requested by our insurance company to clean our ducting running from our kitchen canopy to the roof. As we where not the original tenants in this premises it meant we where looking at over 10 years build-up of grease and associated debris.
Having had numerous contractors look at the job, non could guarantee us the ducting would be cleaned to the required standard. It looked like our only option was to take down the ducting and naturally this process would have caused serious disruption to our business as it would have entailed closing for at least two days.
Andy Knight purchased a machine that did this work in just over six hours in one night. From the camera on the machine I could see the difference in the "before and after".
